Sample a scintillating signature selection of native game meats, fruits, nuts, berries, spices with damper bread all prepared in house by the chefs. Follow this with lavender cured Cairns Crocodile with melon salad, pickled cucumber and a chilli lime emulsion. Cleanse the palate with the following course to prepare for the seared Queensland kangaroo, roasted apricots, buttered zucchini and a Davidson plum jus. Finish it all off with a choice of mixed desserts or the Chef's assiette of cheese.
